Side dishes should be as easy as possible. Side dishes should not be a distraction from the main meal. A bottle of lemon pepper seasoning is needed to make this side dish special. This lemon pepper zucchini is so delicious with zucchini you may forget about dinner and eat it straight from the bowl.

LEMON PEPPER SEASONING: WHAT IS IT?

Lemon pepper seasoning is a spicy and tangy mixture of black pepper, salt, and occasionally small amounts of other herbs and spices. Lemon pepper seasoning is available from several major spice companies in the U.S. (HT0_ McCormick and Lawry), Badia and others. It’s also available in generic store brands, so it should be easy to find at any grocery store. There are many recipes online for homemade lemon pepper seasoning. However, I am not sure how they compare to the store-bought version.

HOW TO GET BROWNED EDGES ON ZUCCHINI

Zucchini is a large source of water. As shown in the photos, you can take some important steps to ensure your zucchini has those delicious brown edges.

  1. Your skillet should be extremely hot. The zucchini will start to brown if the skillet is not heated enough. The zucchini will become super limp and floppy. This is so that the zucchini’s outside getting brown without becoming soft or mushy. This is a fast technique that will cook zucchini quickly.
  2. You can cook the zucchini in batches. Overcrowding the skillet will also stop moisture from evaporating quickly. The zucchini will continue to simmer in their juices.
  3. Serve the zucchini immediately. It will soften the more time it is left to cook, as the excess heat will steam it.

WHAT TO SERVE WITH LEMON PEPER ZUCCHINI

LEMON PEPER ZUCCHINI

This Lemon Pepper Zucchini is bright and spicy and a great side dish to any meal! This is a great side dish for the summer zucchini bumper crop!

Prep time: 10 minutes

Cooking Time: 10 minutes

Total Time: 20 minutes

INGREDIENTS

  • 1.3 lbs. zucchini ($1.32)
  • 1/2 Tbsp lemon pepper seasoning ($0.15)
  • 1 Tbsp olive oil ($0.16)

INSTRUCTIONS

  • Slice the zucchini in half and make them about 1/4-inch thick.
  • Place the zucchini in a large bowl. Sprinkle the lemon pepper seasoning over the top. Mix the seasoning into the zucchini.
  • Place a large skillet on medium heat. When the skillet is hot, add half the olive oil to it and swirl it around to coat. Stir in half the seasoned zucchini. Continue to saute for five minutes, or until the zucchini’s golden brown outside.
  • Place the zucchini in a bowl or on a serving plate. Add the olive oil and remaining zucchini and continue to cook. Serve immediately
